Simple baked squash
Mash four large cloves of garlic with two tablespoons of chopped thyme and four of olive oil.
Cut a kilo of squash in to small dice, tip in to a baking tin and toss with the garlic mixture.
Bake at 200C for about an hour until the pumpkin is crisp but still soft inside.
